Hasta que el otoño no
asome la cabeza, lo que más me apetece es tomarme un buen gazpachito fresco. Para preparar la receta de Gazpacho necesitamos:
- 1 kg de
tomates maduros
- ¼ de pepino
- 1 diente de
ajo
- ¼ kg de miga
de pan
- 100 g de
pimiento verde
- 100 cl de
aceite de oliva
- 1 l de agua
fría
- Vinagre de
jerez
- Sal
Ponemos la miga de pan a remojar
hasta que este tierna.
Pelamos los tomates y los troceamos. Los metemos en
un vaso de batidora junto con los
pimientos troceados, los ajos pelados, el pan, el pepino, el aceite, un poco de
vinagre, la sal y el agua fría.
Lo batimos todo hasta conseguir un puré cremoso,
rectificamos de sal y lo metemos en la nevera.
Cortamos la guarnición en dados
(tomate, pan tostado, pepino, cebolleta) y lo colocamos en un plato. Añadimos
el gazpacho y servimos.

With the cooler
temperatures of fall still a month away
there´s nothing I like better to stave off the heat than a good cool redder
than red gazpacho (Southern Spanish for delicious tomato-among other things-soup
served cold). To make 4 servings you need:
- 10 medium sized ripe
tomatos
- ¼ chopped
cucumber
- 1 garlic
clove
- 1 cup bread crumbs (stale
and dry are the best)
- 1/8 cup chopped
green pepper
- 1/8 cup
(good quality!) olive oil
- 1 quart (1
litre) of cold water
- 1Tablespoon of
sharp vinegar (not sweet Modena! Better type Jerez)
- 2 teaspoons
salt
The first thing to do is put the bread crumbs in a bowl to soak until
soft.
Then peel and
chop the tomatos. (to do this easily put them in boiling water for 10 min.)
Afterwards
put the tomatos into a mixing bowl with the chopped peppers, the peeled garlic,
the wet bread crumbs, the chopped cucumber, the vinegar, the salt and the (really)
cold water.
Puré until as creamy as possible, check the salt to taste and into the fridge
it goes.
Prepare a
garnish of small amounts of chopped tomato, cucumber, onion and croutons. When you serve it put the garnish in the bowl
first (gazpacho is traditionally served in a large cup) then pour the gazpacho in afterwards and Bob´s
your uncle.
